Unrecipe of the Week: Poptails

This has been one of the hottest summers on the record books. Cold rosé is being turned into “frozé” and cocktails are being frozen into pops to help beat the heat. Last weekend, I hosted a few ladies for brunch, and we kicked off the day with a refreshing “poptail,” to get our party started. Later, as the guys came by to join us, they were starting to get a bit melted. No worries there; we simply plopped them in a glass and poured some champagne over them for a drink that was part kir royale, and part smoothie. Either way, it was a hit!
While this recipe is super simple and tasty, you could take almost any summer cocktail and freeze them in ice pop molds with good results. Besides, isn’t everything better on a stick?

Strawberry Grapefruit Poptails

Place 1 pound of strawberries, washed and hulled into the blender. Add about 1 cup of grapefruit juice (fresh is best, but unsweetened natural juice is fine too!) and puree until thick and smooth. Add about 5-6 oz. of vodka and blend.

Pour the mixture into ice pop molds and freeze until the are just starting to solidify. Place the sticks in the molds and freeze until firm.

To remove from the mold, run the bottoms under warm water to make them easier to pull out and enjoy!

Unrecipe of the Week: Gazpacho Marys

With produce at the height of its summer glory, it is the perfect time to make gazpacho. This “unrecipe” is a twist on the classic. It lies halfway between a cold soup and a bloody mary with the addition of an (optional) shot of icy cold vodka.

Gazpacho Marys:

Chop up an onion, a few cloves of garlic, a seedless cucumber, 4 big tomatoes and 2 red bell peppers.  Add about 1/4 cup of olive oil and 1/4 to 1/3 cup of white balsamic vinegar, and puree in batches until it is “chunky smooth.”  Blend in some tomato juice, until it reaches the desired consistency, about 1/2 to 3/4 of a large bottle. Season with a couple of big squirts of srirachia ( or any other hot sauce you like), and salt and pepper to taste.

Chill for several hours or overnight to allow the flavors to develop. Taste and adjust seasonings if necessary.

To serve:  Ladle the gazpacho into a martini glass, and add a shot of icy cold vodka.  Garnish with chopped cucumber and enjoy!

Don’t Bug Me

Mosquitos love me. I don’t know why. If there is a mosquito in the ‘hood, it will find me, and attempt to eat me alive.

This year the insects seem to be of epic proportions. Their bites are red, raised and itchy.

But hey, no worries…relief is often found in your kitchen cupboard!

Apple Cider Vinegar has antiseptic properties and takes away the redness and itching associated with insect bites.  Mix a little of the vinegar with water, and apply it with a cotton ball to the affected area.

Vodka can also relieve the itchiness. Icy cold vodka, stored in the freezer of course, combines the antibacterial properties of alcohol, with the comfort of a cold compress. Apply it directly to the area with a washcloth. If you do not find relief right away, pour it into a glass, add a twist of lemon and drink it!

That brings us to our next cure, lemon juice. It is a natural detoxifier,  which helps to reduce swelling and itching. Squeeze the lemon into icy cold water, and apply with a washcloth, or spray bottle.

Lavender oil is said to have soothing properties for the skin. It is also reportedly a natural bug repellant. Spray a little lavender oil on your skin before exposure, to help avoid annoying insect bites in the first place.

Unrecipe of the Week

This weekend marked the unofficial start to Summer. We had an indoor picnic with lots of summery salads and a light fruity dessert. Our mini strawberry shortcakes and Grand Marnier marinated strawberries were accompanied by a scoop of this homemade strawberry and coconut milk sorbet that is so easy to make, you don’t even need an ice cream maker to do it!

Strawberry Sorbet with Coconut Milk:

1 bag of frozen strawberries

1 cup of sweetened coconut milk

juice of one lime

1 or 2 tablespoons of honey

Toss all the ingredients into the blender, and puree until smooth. Add a dash of vodka ( not enough to taste it!) to prevent the mixture from freezing too solidly.

Freeze until ready to eat and enjoy!
