Sweet Potato Toast

The internet is buzzing right now, with this year’s versions of gluten free alternatives. In an effort to replace those processed carbs, a plethora of vegetable substitutes abound. First, there was cauliflower, masquerading as mashed potatoes, rice and even pizza crusts. The latest iteration for healthy substitutes is the sweet potato, sliced and popped into the toaster to create  “sweet potato toast”.  These slabs of hot and slightly caramelized potatoes, get slathered with everything from nut butter and bananas, to the beloved avocado mash that everyone seems to covet.  Paleo and Whole 30 approved, this one could be a game changer in the boring low carb, no grains, no dairy, no sugar, no legumes, no fun world of food.

Skeptical of the natural sugars dripping into, and ultimately ruining my toaster, I set forth to explore this phenomenon myself. The results? Not bad!

If you decide to use your toaster, be aware that you will have to press it down and retoast several times until the inside of the slice starts to soften. It seems that putting it in the oven, especially if you want more slices than your toaster has slots, is a better method.

It is important that the slices are uniform, so that some aren’t burnt when others are hard. One of my slices charred on one edge, which was easily trimmed off after toasting.

To make sweet potato toast in the oven:

Place the long slabs of sweet potato on a rack over a cookie sheet, and toast in a very hot ( 400-450 degrees) oven for about 15-20 minutes, until brown on the outside and softened, but not mushy on the inside. Top it with fruit, eggs, smoked fish or avocado, or simply slather it with butter and jam, if your diet allows. Anything you might put on bread is a candidate for sweet potato toast.

Nobody is going to believe that this is bread, anymore than people believe that thin strips of zucchini are pasta. But both are very healthy and tasty alternatives to the real deal, bringing a new texture into your diet and offers a healthy break from the “same old, same old.”

Toasts With The Most

Avocado toast has been a phenomenon that has taken over brunch. Can anything surpass the thick slices of multigrain bread, slathered with lemony mashed avocado? Maybe!
It’s time to take back the toast, with new combinations of toppings and spreads.

We’ve recently served breakfast crostinis, consisting of smoked salmon, creme fraiche and dill. Tangy ricotta topped with strawberries and drizzled with honey. Even open faced BLT’s with spicy srirachia mayo.  But some of these beauties we’ve found web surfing for inspiration take the cake; or the toast, if you will. Level up your next brunch with some of these beauties, and let your imagination soar to create your own “toasts with the most”!

Dark chocolate almond butter, with toasted almonds and shredded coconut? Oh yeah!

We aren’t sure where to look first with this one! Strawberries and cocoa spread with almonds and cacao nibs? Or the cherry tomatoes with basil and greens? How about the hummus and radish, or the avocado toast upgrade? We’re torn between the peanut butter and cinnamon bananas, and mandarins with passion fruit and pistachios!

This takes toast to an art form when bread is substituted with biscuits, covered with fruit and vegan chocolate cream made from almond milk and cacao powder.

Avocado, smoked salmon, pomegranite seeds, fennel slices and dill sprigs are a spectacularly beautiful and healthy variation on the theme.

These often grain-free beauties use beet and purple sweet potatoes to get their naturally vibrant coloring.Blood oranges and hazelnut pesto aare among the interesting flavors used to create these delectable, and healthy toasts.

Unrecipe of the Week: Avocado Toast

Over the holidays, we have somehow become addicted to avocado toast. Maybe it’s because it’s so easy to make, maybe it is because we think it’s healthy, maybe it is because it is so satisfying and comforting, but most likely it is because it tastes so good! We have been making it on mini slices of toasted baguette as an appetizer, but you can use whatever type of grainy, delicious bread you have and make a meal of it.

Avocado Toast:

Brush slices of bread with olive oil, and sprinkle it with sea salt. Toast it in the oven until it just starts to brown. Watch is carefully, as bread goes from barely brown to burnt pretty quickly!

In the meantime, mash up a ripe avocado and mix it with the juice of  1/2 of a lemon, sprinkle it with some red pepper flakes and a little sea salt to taste.

Spread the mixture on the toasted bread and devour  enjoy!

Get creative with it: Rub a garlic clove on the bread before toasting to give it a little more flavor. Sprinkle some diced tomatoes on top for a little extra color. Mix in a few chia seeds for some added health benefits. Serve with a poached egg or some smoked salmon and make a meal out of it!
