Food Additives Found In Industrial Products

Riddle of the day:

What does your yoga mat have in common with your lunch?

Answer: If your lunch includes commercially baked bread, the answer just might be azodicarbonamide.

This compound, often used to improve the texture of dough, has been shown to cause respiratory issues in factory workers who were exposed to high levels of azodicarbonamide. There is no indication that small amounts, like the amount found in bread, is actually harmful to ingest.

The fact that it is used in rubber products from yoga mats to flip flops was the red flag for many health advocates. The compound makes the rubber lighter and more flexible.

Many food products benefit from the same type of aeration, such as pastries, pizza, bread products and tortillas.

Subway was the first of many companies to be called out on the use of azodicarbonamide, and urged to find an alternative.

While we fully support taking any chemicals out of our foods, there are far more potentially lethal additives, such as BPA and potassium bromate to contend with.

The best line of defense in protecting yourself and your family from harmful food additives is to eat fresh foods, and avoid processed and packaged foods wherever possible.

Unrecipe of the Week: Zucchini “Pizza”

The holidays have taken their toll, and we would be hard pressed to find anyone who is not interested in “reeling it in” a little bit, on the indulgence side. This quickie vegetarian dish could be the centerpiece to a meal, or a great appetizer. The zucchini base functions in lieu of a crust, and is topped with tomatoes and cheese like a pizza. It has all of the flavor, and none of the guilt of the real deal. While I wouldn’t go so far as to say it replaces traditional pizza, I will say it’s a darn good alternative when the craving strikes and the scale is recommending abstinence!

Zucchini “Pizzas”

Slice open a zucchini lengthwise, and shave a little off the bottom so that it lays flat. Place it on a cookie sheet, brush it lightly with olive oil, and sprinkle it with finely diced garlic. Top with thin slices of tomato, and sprinkle with some shredded basil, and salt and pepper to taste. Top it with mozzarella cheese, and bake in the oven at 350 degrees for about 30 minutes. For an even lighter version, use Parmesan cheese instead of the mozzarella.

The Superbowl is Not a Giant Bowl You Fill With Snacks

Today is Superbowl Sunday. It is an annual event that is to junk food what turkey is to Thanksgiving.

It is expected that Americans will consume over 11 million pounds of potato chips, 8 million pounds of tortilla chips and more than 4 million pounds of pretzels. Add in 1.24 billion chicken wings, 4.4 million pizzas and 111 million gallons of beer. No word on guacamole and bean dip consumption.

The average person will consume 1200 calories during the game. That’s alot of calories.

What would it take to burn off the day’s excess?

Actually playing football instead of just watching it could torch the entire amount in two hours. Walking it off could take 5 hours, but a moderately paced run could burn them off in two. A good spinning class or 3 could solve the problem in about 2 1/2 hours.

Taking a relaxing yoga class could help you come to terms with your indulgence, and work it off if you are willing to practice for 7 hours straight.

Or you could just enjoy the game and go back to healthy eating tomorrow.

It’s Not Easy Being Green: Unrecipe of the Weekend

Friday night is pizza night at our house. Over the last year, I have chosen to abstain and prepare something simple and healthy for myself, without worrying about whether or not anyone else will like it. I wake up feeling more energized, and everyone is happy with his or her meal.

Last Friday night, I worked with what I had on hand, trying to use some of my CSA items.

 

I split and roasted the acorn squash with a little honey and butter in a hot oven for about 45 minutes.

I sautéed a tiny shallot, and some finely shredded kale in a little olive oil, and lightly browned some pignoli nuts in the pan. I tossed the vegetables with some quinoa cooked in stock and stuffed it into the cooked squash cavity. You can toss in a few dried cranberries for a sweet and colorful pop.  A sprinkling of black pepper and a little chopped parsley provided a finishing touch. Easy, healthy and flavorful!

The stuffed squash a nice glass of red wine were the perfect early fall meal.

I have now used the squash, kale, lettuce, kohlrabi, and a little of the parsley. The pineapple sage did not survive the night.

I just have the collards and parsley left to go. What shall I do with it?

Fast Food Fiasco

Just when you think it can’t get any worse, someone comes up with something that tops it all.

Pizza Hut, reeling from its successful hot dog crust pizza, has released a cheeseburger crust pizza in the Middle East.

Dubbed the “Crown Crust Cheeseburger Pizza”, this delicacy has mini burgers set into the crust along the perimeter of the pizza, topped with melted cheese. The center of the pizza is filled with more ground beef, lettuce and tomatoes, and drizzled with “special sauce”.

Are you salivating yet? Sorry, it is only offered for a limited period of time in their Middle Eastern locations.

Good thing we just wrote about natural stomach remedies, huh?

Unrecipe of the Week

Cauliflower is an amazing vegetable. It tastes great roasted, and can masquerade as mashed potatoes. I recently started hearing about cauliflower pizza crust, and became intrigued. A little searching led to me a few recipes. This one is taken from “Eat, Drink, Smile” and adapted a bit. It is low calorie, and wheat and gluten free. It yields a soft, almost quiche-like crust that requires a fork to eat. It’s not a traditional pizza, but it is an interesting, tasty and healthy one.

Cauliflower Pizza Crust:

Preheat the oven to 450 degrees.

Cut one head of cauliflower into florets and put them into the bowl of the food processor. Pulse until it is the consistency of grain.

Place the cauliflower in a glass bowl and microwave it without adding water for about 7-8 minutes, depending on your microwave. Allow it to cool.

In a medium sized bowl, mix about 2 cups of the cauliflower with 1 ½ cups shredded mozzarella cheese, 2 eggs beaten, a finely minced clove of garlic and about ½ tablespoon each of dried oregano and dried basil and some sea salt to taste.

Cut parchment paper into circles (about 8-9”) to use as a guide to create the crusts. Place them on a cookie sheet, and spray with cooking spray. Spread the mixture onto the parchment rounds in a fairly thin, even manner. Bake the crusts for about 15 minutes or longer, taking them out before the edges get too brown.

Add the toppings of you choice. I used a chunky tomato sauce and fresh mozzarella cheese, and added pepperoni for those who desired it,and sprinkled it with chopped arugula when it was done.

Put it back into the oven under the broiler for a few minutes, until the toppings are hot and bubbling.
Serve immediately and enjoy!

Hot Dog Pizza?

Just when we thought that Americans couldn’t get any less healthy in their food fascinations, this delicacy turned up in the UK.

Pizza Hut has taken junk food to a whole other level, by introducing their Hot Dog Stuffed Pizza.

The chain describes it as “succulent hot dog sausage bursting from our famous stuffed crust with a free mustard drizzle” and is only sold in the large, 14” size.

Although there is no nutritional information available on the company’s website, health and wellness site Blisstree did a little creative estimation.

According to their calculations, one slice of a large stuffed crust pizza logs in at about 250 calories, and 10 grams of fat. The slice can house about 1 hotdog and 1/3, which would bring the total to 380 calories and 22 grams of fat! No telling what is in the mustard drizzle, which we suspect is made of a lot more than just mustard.

It seems like only a matter of time before this one will make it’s way stateside.

I have indigestion just thinking about it!

Here at Indigo Jones, we thought we would publish an “Unrecipe Mash-up” of some of the recipes we have posted previously, as an upgrade to the junk food that is usually served at these gatherings.
