Kitchen Tips Tuesday: Make Your Own Flavored Water

I don’t know about you, but downing at least 64 ounces of water per day is tough.  Companies have come up with low or no calorie drops that you can add to your water to give it a more flavor,and more chemicals and artificial ingredients to boot. Vitamin Water lists 20 ingredients, mostly unpronounceable, on the label of their water enhancers and popular brand Mio is right behind them. Don’t get drawn in by the occasional vitamin listed on the label. The artificial sweeteners, and other additives far outweigh the benefits of a little bit of vitamin B.

While enhancing the taste of your water might help you drink more, doing so naturally is the best bet.

You can make your own naturally flavored water by adding fresh fruit and herbs to a pitcher of water and letting it steep in the refrigerator overnight.
You can also freeze pieces of fruit and water in ice cube trays to provide a flavor boost while keeping your water chilled.

Be sure to carefully scrub all of the fruit before using to avoid adding any impurities to the water.

Citrus fruits, such as lemon, lime, grapefruit or orange add vitamin C and a lot of taste to your drink.

Try adding less obvious choices, such as cucumber, strawberries, mint leaves or grated ginger. Many of these are known to reduce bloating and help digestion.

Unrecipe of the Week: Fish Tacos

Here is a light, summery variation on tacos. They are simple and healthy, and rely on fresh, zesty flavors, rather than the heavy beans, sour cream and cheese often found in the meat variety. The fish is marinated, and they are served with a simple slaw and diced vegetables. A typical “unrecipe”, they are easily customizable to suit your tastes.

For the fish:

Marinate any white fish (Cod, flounder or tilapia for example. I used tilapia ) in the juice of 2-3 limes, a tablespoon or two of oil, a clove of garlic finely chopped, and cumin, cayenne pepper, salt and black pepper to taste.  Coat the fish and allow it to marinate in the refrigerator for at least 15 minutes, or up to an hour or two. If you try to marinate it too long, the citrus may cause it fall apart.

Grill or broil the fish until cooked through. Set aside.

For the slaw:

Finely shred 1 napa cabbage and chop a big handful of cilantro. Toss with a little lime juice and olive oil and season with salt and pepper.

You can add a bit of chopped red onion to the slaw, but I chose to serve them on the side, since I dislike raw onions so much!

Dice avocado, and fresh tomatoes for additional fillings, or use guacamole and salsa if you prefer.

To serve:
Heat flour or soft corn tortillas and cover with a kitchen towel to keep warm.
Place a piece of the fish on the taco, add some slaw, and avocado, and tomatoes, sprinkle it with a little hot sauce, roll it up, and enjoy!!

Kitchen Tips Tuesday: How to Get More Juice From Citrus Fruits

When using citrus for cooking, it’s important to extract as much juice as possible from the fruit.
Here’s all the juicy details to help you get the most from your citrus fruits.

Lemons and limes can sometimes be very firm, and hard to juice. Placing them in the microwave for about 10 seconds or so, softens them and brings out the juice. Be careful when you cut into them, the juice can get hot!

Rolling the fruit on the counter before cutting is another way to release the juices. Use firm pressure as you roll the fruit before cutting.

This little kitchen gadget makes juicing super easy. Just place the cut fruit into one side of the cup, and squeeze! It allows the juice to pass through, keeping excess pulp and seeds inside.
