When we take muffins out of the oven, we like to flip them onto their sides while still in the pan to let the air circulate as they cool. This prevents the bottoms from getting soggy. Use a fork to gently nudge them over so you don’t burn your fingers. Once they are cool enough to handle, move them to a wire rack until ready to store.
