What is the most effective way to store washed greens?
Herbs and other greens are best stored, wrapped in a paper towel, and placed in a plastic bag.
Simply wash the vegetables, wrap them in a slightly damp paper towel, and place them in a bag in the refrigerator drawer. At the first sign of decay, dark spots will start to form on the towel, indicating that you should use them up in the next day or two.
This is also effective when preparing fresh garnishes, such as chopped parsley or herbs and lemon zest. Place a damp paper towel over the prepped items until ready to use a few hours later.
