It’s CSA Tuesday again, and this week’s selection is a little different.
I am getting a bit backed up in the pumpkin department. Pie? Ravioli? Halloween decor?
We got some carrots, parsley, a giant cabbage and some broccoli.
We also got 4 enormous leeks.
While I am sure some of this will become CSA soup by Sunday night, I intend to get creative with some of the rest.
Ideas always welcome!

What pretty looking pumpkins! I blogged about how to put mine up here: http://www.farmfreshfeasts.com/2012/09/processing-pile-of-pumpkins.html So far I’ve been making muffins out of them, but expect to get into deeper things later in the winter. Those leeks look great-I’d love to find that in my farm share this fall.

Thanks Kirsten! I admit I am a little daunted by the idea of cutting, cubing cooking and pureeing all that pumpkin.
Hopefully, your tips will help me through it.

This recipe from Giada de Laurentiis is amazing.. I’ve made it multiple times and it is always a hit. I’ve actually had two separate people tell me I should open a restaurant after I cooked this for them. I always have extra filling left over so I make a bunch of the tortellini at once and freeze them. Also, if you can’t find the amaretti cookies you can leave them out, it’s not a make-or-break ingredient and the squash is sweet enough without them.
